The comfort-miso-much bowl and the smokey shiitake bun

When Anne-Tu asked me to come up with a new special for their bowls and buns my answer was yes, yes indeed! I just can’t get enough of buns and I am also a huge fan of bowls. One of the most insane buns I have eaten the past year is the hoisin shiitake bun at Momofuku Noodle Bar in New York.

David Chang, the king of bao buns, knows how to make buns that make you scream for more. I took my first bite of the mushroom topped bun and it was umami all over. This is the bun that I wanted to create for Bowls & Buns and so the Smokey Shiitake Bun was born. We also put the smokey hoisin shiitake in the bySam signature bowl. We added miso eggplant. Ever since I’ve discovered the magic between miso and eggplant I just can’t get enough of it. And the combination with steamed white rice is just superb.
